Café Panache is located on a lesser known part of the Ten Kate market. From the outside, you wouldn't expect there to be a large restaurant in this converted market storage. Panache's menu is market based, buying seasonally focused produce and sustainable seafood. Unfortunately they have skipped the vegetable market stallsa bit to much because as a vegan you can unfortunately not have a full diner here. They do have plenty of vegetarian options. In addition to dining, Panache also has a cozy bar for a drink. If you can't eat here, you can always choose to have a drink at this hotspot in Amsterdam.
