Description

De Librije is perhaps the famous Michelin star restaurants in the Netherlands. They are located in a characteristic building that used to be a prison in Zwolle. Many original and authentic details have been well-preserved. In the kitchen, a lot of work is done with regional products. The dishes have a contemporary twist. The restaurant usually servers 2 menus. One in which meat and fish is served. The other a vegetable menu. A vegan menu is available on request. When it is indicated that there are dietary requirements, this can certainly be taken into account. In addition to the menu, dishes can be added. Reservations for lunch or dinner are recommended. Examples of vegan dishes:

  • The cauliflower Blanched cauliflower fried in sunflower oil. The capers are also fried in sunflower oil. The curry madras sauce is drawn in sweet and sour. It is then sieved and mounted with vegetable butter.
  • The Chinese cabbage The heart of the Chinese cabbage has been in Kimchi for 2 nights. Grated frozen sereh, red pepper and ginger can be found in this dish. The heart is filled with crispy potato chips. The dish is finished with a vegan Stroganoff sauce and allspice oil.
  • Romanesco In this dish, the heart of romanesco takes center stage. A little bit about that coffee powder. The remainder of the romanesco is processed into a matching cream. It dish is finished with nasturtium sauce and a cashew crunch.

  • Mouth entertainments Three tasty surprises, including a rose made from beetroot with lovage and spicy cream. A ring of crispy potato with lime crunch, coffee cream and Cauliflower. Finally a brioche bread made from watermelon tartare, baharat cream, spicy cornichons, Olde Rem
  • Aubergine An eggplant tartare, made with lemon puree. On top of that bimi, bread croutons and sesame cream. Finished with raw mushrooms.
  • Celeriac Millefeuille made from celeriac and seaweed from Dutch soil. Topped with a pistachio crunch, crispy sea lettuce and celeriac stock with sherry.
